A lot of it is spending enough time with the character that you develop a sense of what sounds right for them to say, and how: whether they favour long or short sentences, whether they meander or get to the point. A tip I like is to be conscious of the reference points of that character's life. This could be their environment, the TV show they grew up watching, their interests, their fears. These factors all play a part in how someone thinks and speaks. I might write Kita looking at a sunset and thinking it's getting dark out in the rice field, while Osamu might make a laconic observation about how it looks like an egg yolk. Different scenes trigger very different thoughts/dialogue from different characers, depending on what has shaped them as a person in their lives so far.
